Yummy Sweet Potato Crust Quiche!

This is one of my favorite new creations! Super easy & you can add what you like. Today I threw in spinach, onion, green peppers & jalapeños along with feta. Here is the original recipe....I say “recipe” but I just made it up as I go but because people asked, today I paid attention to the measurements I used. If you make it, let me know what you think & put into yours!


Deb's Sweet Potato Quiche

Sweet Potato Crust 1. Spray pie plate w/olive oil or other (my plate is 11" inches) 2. Using mandoline slicer, Slice thin enough sweet potatoes to line the pan. Slightly overlap the potatoes and/or cut in half if needed as you move up the sides. 3. Spray the potatoes with olive oil (or other) 4. Bake 20 mins at 350 (it will shrink, I add additional slice’s to fill gaps & pie plate before egg mixture 5. Set aside to cool

Quiche 1. Saute' one cup of onions 2. Add 1 whole pack (bag) of baby spinach to onions and saute until cooked 3. Set aside until later 4. In bowl, mix 4 large eggs and 1 1/2 cup white eggs. I use egg whites you can buy. 5. Mix eggs with whisk 6. Add Thyme (I used a whole pack) but use to taste, salt and pepper to taste

Assemble 1. Line the sweet potatoes with the spinach/onion mixture. I went up the sides as well if enough. 2. Whisk and pour egg mixture in to pie plate 3. Sprinkle 3/4-1 cup or to taste feta cheese. I use reduced fat 4. Sprinkle with black pepper 5. Optional: Add sliced tomatoes to the top

Bake at 350 for 30-35mins until browning on top

I made this same recipe with hashbrown's (I sauted onions in the hasbrown's as well as the spinach) bc I didn't have sweet potatoes and it was yummy. Added Chicken apple sausage a well. You can put in whatever you want.
